SharePoint 2007 Workflow Task Reminders

I have a simple out-of-the-box serial approval workflow that has 5-8 approvers.   Occasionally a user will get an overdue task reminder email for a task that was approved weeks ago.  The entire workflow iteself was also completed prior to the reminder email.   We are using SharePoint 2007 and Office 2007.
